Date Night for Dinner

Have you ever done date night for dinner?  Date night is a highly anticipated night at our house.  It gives me a chance to put on my cooking hat and fix up some of my favorite meals… or a chance to try out a new recipe!  IMG_6491

I love making homemade noodles.  They are easy to make and will surely wow your guest (or family).   I typically follow this really simply recipe.  Just remember the key is to make the noodles as thin as possible but if you like the noodles thick be sure to give them plenty of time to cook.

 Ravioli Dough

3 cups Flour

4 Eggs

1 teaspoon Salt

2 table spoons olive oil

Screen Shot 2015-07-23 at 11.24.22 AMThen roll out the dough and cut it in circles, I use a cup.  Once you put the stuffing in the middle close it using a fork.

Stuffed spinach Ravioli

1/2 cup of chopped spinach

1/4 cup finely sliced onions

1/2 cup minced mushrooms

1/4 cup ricotta cheese

Mix everything together add a dash of sea salt and garlic powder.

Kids cant even taste the mushrooms when minced!

I served these ravioli with a white wine sauce, scallops and asparagus.  Santa Margarita Pinot Grigio is always my go to wine but the  flavors complimented this particular dish exceptionally well!


A Deep Thought for the Day:  I often say, “Through imperfections something beautiful is created.”  Sometimes our imperfections or fears cause us to give up, or never try for something that we want.  I have found more satisfaction from trying even if it isn’t prefect then living with an unknown.  Even in my hectic, sometimes mess of a life, something beautiful is created by just taking that first step.  Thanks for stopping by my blog
